That may be automated for a reason. The only reason I can think of the battery state of charge target being less than 100% is if the bms is taking battery decay into account. Have you tried programming bms to tell it there is a new battery installed?

Yes I put the new battery and then I reset the battery BMS, but the start-stop system with intelligent charging kills the battery I had the las one just three years. That's why I would like to set the goal to 100% instead of 75

I think it would be easier to solve the problem of the battery getting damaged rather than trying to reprogram the car.
Bms is designed to make the battery life last as long as possible. These systems only work however if everything is to the correct specification and working. So if the battery is the correct type and capacity and the cars systems work then it should be fine.
But if you have made a mistake like replacing an AGM battery with a standard flooded cell, then no matter how much you change the target charge level the battery will always get destroyed anyway as AGM charges at a slightly higher voltage than flooded cell batteries and hence the flooded cell always gets overcharged and will die young.
